    I’m setting up an umbrella company that will have several companies under is using DBA’s. Should I setup a different database for each DBA or should I keep everything in one big database?

    If there is just one tax paying entity, you want everything in one file. To get the breakdown by DBA, you'll want to use classes to be able to get profit & loss by business.

    go to Edit, Preferences, Accounting and check use classes.

    Then set up your classes under lists. For each transaction, in addition to specifying what account it's hitting, you'll also specify what class it's associated with.
