I would like to track workman's compensation rates on each job and employee as I go and not wait for a year end audit. Can anyone tell me if QB Pro can be set up to do his or even if things can be exported to Excell and this somehow be calculated? Please let me know.

Althought I don't do this for my clients, I see no reason why you couldn't export a report by payroll item (I'm assuming that you have multiple w/c rates...) and then have it calculate for you.
I would test it and see what happens...It depends on your needs - are you construction where you have not only different job classifications but also some classifications that go by payrate so as to make things really complicated?

Tracking Worker's comp is quite possible in QB whether it's a fixed percentage of total gross wage or a flat rate per $100.00 earned.
Create Company Contribution type payroll items for each WC classification assigning either a fixed percentage or flat dollar rate that is based on quantiy, if you use fixed percentage remember to enter your default rate with the percent sign.
Create or rename payroll wage items to correspond to WC classes and use these when entering timesheets. For example if you have a WC Class for Laborers your company contribution item would be called WCC Laborers and your payroll item would be called Laborer.
As you create your paychecks you can readily see that Employee A received $400.00 worth or Laborer wages for the fixed percentage method you would enter a quantity of 400 for the flat rate you would enter a quantity of 4 in order for QB to calculate correctly.
If you would like more details post here or contact me directly and I would be happy to provide you with additional set-up details.
